Baked Stuffed Peaches & Apricots

Cooking for Vitality for the Earth Element in Late Summer.
The earth foods we eat to create balance have a natural sweetness. Yellow foods. Summer fruits like peaches, nectarines and apricots. Delicious, sweet and juicy. Eat them fresh, stewed or baked. Best not to over indulge. Fructose, the natural, simple sugar found in fruits can have the same effects as refined sugars if you over indulge, although way better for you. Best to stick to a couple of pieces of fruit each day. The fibre in fruit can also cause bloating if you eat too much.

INGREDIENTS:
Peaches & Apricots, any amount you have on hand
Quark or cashew paste
Maple syrup
Vanilla essence
Pecans or walnuts
Honey yoghurt or double cream

Cut fruit in halves and take out the seeds.
Arrange on a baking tray.
Place a generous spoonful of quark or cashew paste in the centre of the fruit- fill the hole left by the seed.
Sprinkle with a little cinnamon and coconut sugar or drizzle with maple syrup and vanilla.
Place 2-3 whole pecans or walnuts into the filling.
Bake in a moderate oven 160" for aprox 20 min until a little browned and soft.
Eat hot or cold on their own or serve with honey yoghurt or double cream. Yum enjoy!!
