Winter / Earth Element

Winter is the season for the water element which governs the kidneys and the bladder. Notice how the cold affects and stimulates the bladder and makes us contract into the back of our body. It is important to stay warm, keeping our feet warm, and our bodies warm. Winter is an internal time of hibernation to contemplate, rug up and reflect. And eat dahl!

Baked Stuffed Peaches & Apricots

By embracing the earth element in good timing no long term harm is done. The earth foods we eat to create balance have a natural sweetness. Yellow foods. Summer fruits like peaches, nectarines and apricots. Delicious, sweet and juicy. Eat them fresh, stewed or baked. Best not to over indulge. Fructose, the natural, simple sugar found in fruits can have the same effects as refined sugars if you over indulge, although way better for you. View the Recipe >

In late summer we want to embrace the earth element foods to create a grounding effect for the mind/heart and body. We need to eat more cooked foods including starchy vegetables and whole grains. These foods are a little heavier, still easy to digest and provide a more slow release energy food.

Indian Kofta Balls
Autumn / Metal Element

To make the Kofta balls you will need a medium size mixing bowl and mixing spoon, a food processor or grater with the patience to stick with it. You will need a cast iron pan or similar favourite non stick fry pan and tool for turning with- I prefer two soup spoons.

Corn, Pumpkin & Zucchini Fritters
Spring / Wood Element

These fritters are delicious and easy to make with simple ingredients. Serve with sweet chilli sauce, chutney or aioli and lots of love. Sauerkraut is an awesome side dish or some fresh garden greens.

Cooking for Vitality Workshops

Cooking workshops are always part of the retreat program. Good food should definitely be part of daily life. I always choose organic ingredients when possible and wholefoods free from artificial additives and ingredients.

Sample MENU for the workshop:
Starters: Vietnamese rice paper rolls with fresh Straddie Prawns. Chilli and tomato jam.
Main:Free range chicken breast poached in red wine with garlic and fresh garden herbs, olives and cherry tomatoes. Salads- Green with avocado and carrot with currants and cashews.
Dessert: Chocolate beetroot cake with organic cream and strawberries.

All meals are gluten free. Tea and mineral water are provided.

Time: 11am - 3pm (includes lunch)

Investment: $120 each for a min of 6 people
