corn pumpkin zucchini fritters

Corn, Pumpkin & Zucchini Fritters

Cooking for Vitality for the Wood Element in Spring.

To make these yummy fritters, you need a large bowl, grater, mixing spoon, sharp knife, fry pan and egg flip.

INGREDIENTS:
1/4 jap pumpkin
2 cobs of corn
2 medium/large zucchinis
salt and pepper
eschallots or red onion chives, parsley or dill
4 eggs
1/2 cup of corn flour
Favourite cooking oil or ghee

METHOD:
Cut the corn kernels off the cobs into the large bowl. Peel and chop the pumpkin into wedges and grate it into the bowl. Grate the zucchini into the bowl and mix. Add chopped fresh herbs and eschallots, salt and pepper, eggs and flour and mix thoroughly. Heat a heavy fry pan and add a little ghee and a generous spoonful of veggie mix and fry until golden.

Serve with sweet chilli sauce, chutney or aioli and lots of love. Sauerkraut is an awesome side dish or some fresh garden greens.
