Indian Kofta Balls

Cooking for Vitality for the Metal Element in Autumn.

To make the Kofta balls you will need a medium size mixing bowl and mixing spoon, A food processor or grater with the patience to stick with it. You will need a cast iron pan or similar favourite non stick fry pan and tool for turning with- I prefer two soup spoons.

FRESH INGREDIENTS:
1 head small/medium head of broccoli
1/2 medium cauliflower
1 large carrot
1/4 drum head cabbage
1 large onion
Garlic to taste- go 2-4 cloves
A piece of ginger the size of your thumb
2 fresh long red chillies
Ghee or oil

I prefer ghee which is clarified butter for frying the kofta. You can buy this from the supermarket. Allowrie is a good preservative free brand. It is also available from indian grocers. Ghee has a great flavour and is suitable for cooking at high temperatures. In Ayurveda- the ancient Indian science of good health and vitality it is a valued ingredient for all cooking and an elixir to promote good health and longevity.

THE SPICES:
2 dessertspoons good quality curry powder
2 tsp ground cumin
2 tsp cumin seeds
1 dessert sp caraway seeds
2 tsp mustard seeds
2 tsp turmeric
2 tsp garam masala
2 tsp pepper
1 dessert sp of quality sea salt
1 cup besan or chickpea flour, corn or rice flour to bind the ingredients together.

THE SAUCE:
1 chopped onion
1 garlic clove
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp garam masala
1 kg pureed fresh tomatoes
salt and pepper

Process all of the fresh produce- vegies, onions, ginger and garlic. Scrape the processed/grated mixture into the bowl and add all the spices, salt and flour. Add more flour if the mix does not hold together. The mixture will be moist. In your hands squeeze together a heaped dessert spoon of mixture to form a ball. If it holds well together form the rest of the mixture into balls and fry on medium heat till browned all over. Heat the ghee in the pan before adding the kofta. Turn the balls in the ghee to cook all over.

To make the home made kofta tomato sauce - fry chopped onion in ghee with chopped garlic, mustard seeds, cumin seeds and garam masala, salt and pepper. Add 1kg pureed fresh tomatoes and simmer for 10 minutes. Pour over the kofta and rice. Enjoy!

Serve the kofta with home made tomato sauce, natural yoghurt and special rice. Garnish with fresh chopped coriander. Enjoy a delicious vegetarian meal.
